When making a gravy without traditional pan drippings, I like to use xanthan gum which provides a texture more similar to the gluten in a roux. I also add poultry seasoning to help with the depth of flavor. To ensure a rich flavor, I also add 2 Tbsp of our chicken demi-glace. It makes a huge difference and is absolutely delicious. This recipe can be easily doubled if you, like me, have a crew that loves gravy.

In a medium saucepan add the butter and the xanthan gum. Stir until well combined.
Add the herbs, demi-glace, and bone broth. Let this mixture come up to a boil, reduce to a simmer and cook for 5 -7 minutes.
Remove it from the heat just before you’re happy with the consistency as it will continue to thicken as it cools.
