Preheat oven to 425F and line a rimmed baking sheet with parchment paper.
Melt ¼ cup of tallow in a saucepan and peel and cube potatoes into small, even cubes, about 1/2" in size.
- Slice the sausage links into coins about 5 per link. Cube pepper, onions, and mushrooms. Add potatoes, onion, peppers and mushroom to the prepared baking sheet. Drizzle the tallow over the vegetables and sausage. Gently toss to coat. The tallow will become somewhat waxy again; this is ok.
- Cut bacon strips into small strips about ¼ in thick, and add on top of the rest of the ingredients. This helps the bacon get crispy.
Cook for 20 minutes, or until the bacon is crispy and potatoes are cooked through. Top with tallow-fried egg, or serve along with our bone broth scrambled eggs, and top with a slice or two of avocado.
