Directions
Start by pre-heating your skillet. Start with 2 minutes on medium-high. You should be able to feel the heat radiating from the pan when you hold your hand above it.
- Add the tallow to the skillet. The tallow should melt and start to shimmer; that’s when you know it is ready. Note: If you see smoke, it is too hot. Remove from the heat quickly to avoid damaging the pan.
- Once the oil starts to shimmer, crack the eggs onto the skillet. 2 - 3 at a time is ideal to avoid overcrowding.
- When the whites are mostly cooked (about 2 minutes) you can turn them over to cook the other side, or, remove the pan from the heat and let rest for 5 minutes and serve sunny-side up.
