Tallow Smashed Burgers with Caramelized Onion Demi-Glace

We worked with our friend and partner Chef Emari on these tallow smash burgers, and they’re sure to become a staple all summer long (who are we kidding - all year long!). They feature a caramelized onion demi-glace sauce that you don’t want to skip. It adds so much flavor and texture to these delectable burgers.

Ingredients

1 lb ground beef

3 Tbsp FOND’s Chili & Garlic Tallow

½ Tbsp sea salt

½ Tbsp pepper

2 Toasted brioche buns
-
3 yellow onions, sliced thin

1 Tbsp FOND’s Chili & Garlic Tallow

Pinch of salt
-
2 Tbsp FOND’s Five Spice & Pear (or any flavor you like!)

2 Tbsp FOND’s Beef Demi-Glace

Splash of champagne vinegar
-
2 Tbsp unsalted butter
Smash Burgers
Caramelized Onion Demi Sauce
Directions
Heat a cast iron pan or griddle until very hot, then add the beef tallow.
Drop loose beef balls onto the pan, smash down with a grill press or heavy object, and season with salt and pepper.
Let a crust build. Don’t touch the burger patty until the edges go lacy and deep brown.
Flip once, cook 30–45 seconds, then pull off the heat.
In a separate pan, cook the onions on low heat with the beef tallow and a pinch of salt.
Let the onions go deep golden to dark brown.
Deglaze the pan by pouring in the bone broth, then scrape all the fond (little crispy bits) off the bottom of the pan.
Add the demi-glace and reduce the sauce until it is thick, glossy, and coats a spoon.
Add a tiny splash of champagne vinegar to balance the flavor.
Finish with butter if you want that restaurant sheen!
Toast brioche buns in tallow.
Stack burger with a heavy spoon of onion demi sauce over the top.
